Hotaling & Co. Announces 2025 Release of Hirsch The Cask Strength

Hotaling & Co. has announced the 2025 release of Hirsch The Cask Strength, a Kentucky Straight Bourbon Whiskey finished in Hine XO Cognac casks.
Crafted from a mash bill of 72% corn, 13% rye, and 15% malted barley, Hirsch The Cask Strength was double distilled in small copper pot stills and aged for 5 years, 8 months in new char #3 and toasted American oak barrels, before finishing in 30 Year Old Hine Cognac XO barrels for 1 year, 10 months, in Bardstown, KY. The 2025 release of Hirsch The Cask Strength is bottled as 10 single barrels, resulting in four unique proofs: 116 (58% ABV), 115 (57.5% ABV), 114 (57% ABV), and 112 (56% ABV).
Hirsch The Cask Strength is described as having aromas of “plum and rich baking spice.” The palate exhibits a “rich mouthfeel” with notes of “caramel cherry, soft vanilla, mild cinnamon, and muscat grape.” The finish unveils “peach rings, cedar, fig, and gentle tannin structure.”
Hirsch The Cask Strength is limited to 4,146 bottles and is now available in AZ, CA, IL, LA, MN, NM, ND, NV, NJ, SD, TN, TX, WA, and WI for a suggested retail price of $180.
