Barton 1792 Distillery Releases Four New Thomas S. Moore Cask Finished Bourbons

Thomas S. Moore Madeira, Cognac, Sherry & Merlot Cask Finished Bourbon Whiskeys

Barton 1792 Distillery has announced its second collection of Thomas S. Moore cask finished bourbon whiskeys. The second collection will feature a Madeira Finish, a Cognac Finish, a Sherry Finish, and a Merlot Finish.

The latest expressions in the Thomas S. Moore range were distilled from Barton 1792 Distillery’s high rye recipe bourbon and aged for five to six years in new charred oak barrels, before being transferred to their respective finishing casks for an additional one to four years.

Thomas S. Moore Kentucky Straight Bourbon Whiskey Finished in Madeira Casks was finished in a variety of Madeira casks for approximately two to four years and is bottled at 96.5 proof (48.25% ABV). It’s described as having aromas of “complex oak and madeira wine, with hints of tobacco, citrus and dried fruits.” The palate “adds sweetness and subtle acidity to the mild, slightly soft, yet well-rounded whiskey,” which finishes “bright, complex, and pleasing.”

Thomas S. Moore Kentucky Straight Bourbon Whiskey Finished in Merlot Casks was finished in Merlot casks from premium wineries in the Napa and Sonoma areas for approximately two to four years and is bottled at 93.3 proof (46.65% ABV). It’s described as having aromas of “rich fresh fruit, including plums, raspberries, and dark cherries, followed by floral notes.” On the palate, it has a “full and slightly soft taste, with long and lasting notes of fruit,” finishing “long and savory with subtle tannins and toasted oak.”

Thomas S. Moore Kentucky Straight Bourbon Whiskey Finished in Sherry Casks was finished in Oloroso Sherry casks for approximately one to four years and is bottled at 98.7 proof (49.35% ABV). It’s described as having aromas of “sweet, rich fruit and toasted nuts, followed by figs, hints of spicy tobacco and subtle cedar.” The palate is “sweet with a soft, round initial impression followed by a myriad of aged fruits and nuts,” finishing “balanced and sweet with notes of spicy oak.”

Thomas S. Moore Kentucky Straight Bourbon Whiskey Finished in Cognac Casks was finished for approximately two to four years in casks that generally held cognac for six or more years and is bottled at 93.4 proof (46.7% ABV). It’s described as having aromas of “complex fruit and bright citrus that mingle with slightly herbal notes and traces of jasmine and lavender.” On the palate, “notes of orange, apricot and vanilla are followed by complex earthy undertones,” with a “subtle toasted oak and cedar” finish.

All four Thomas S. Moore expressions will be available in limited quantities beginning this month and carry a suggested retail price of $69.99.
