Eden Mill Releases Pedro Ximénez Single Cask
Independent Scottish distiller Eden Mill has released an ex-Pedro Ximénez single cask bottling, representing the first in a series of rare single cask releases from the St Andrews-based distillery.
The Eden Mill Pedro Ximénez Single Cask release was filled into an ex-Pedro Ximenez cask on January 4th, 2016. It was aged for almost nine years before being bottled on October 23rd, 2024 at a cask strength of 58.3% ABV, yielding just 252 bottles.
The Eden Mill Pedro Ximénez Single Cask release is described as a “dream dram for those who love heavily sherried whiskies – sticky, sweet and warming – ideally enjoyed round a fire on a cold night this festive season.” The palate is “bursting with rich flavours of fig and raisin with an underlying hint of oak and red berries,” and the finish is “sweet and woody, with a pleasant dry note coming from the European Oak.”
The Eden Mill Pedro Ximénez Single Cask release is available exclusively on Eden Mill’s website and at Eden Mill’s St Andrews shop at a price of £110 for a 70 cL bottle.
