Still Austin Whiskey Co. has launched the second release in its seasonal Bottled in Bond series: High Rye Bourbon.

Still Austin Bottled in Bond High Rye Bourbon is inspired by the fall season. Distilled from a mashbill of 70% white corn, 25% rye, and 5% barley (100% Texas-grown), High Rye Bourbon was aged at least 4 years and is bottled at 50% ABV (100 proof). The high-rye content is intended to call to mind the crisp fall air, the use of white corn is meant to conjure visions of autumn fields, and the spirit’s deep amber color recalls the red and gold leaves of the season.

Still Austin Bottled in Bond High Rye Bourbon is described as having aromas of “orange zest, Jamaican allspice, fig jam, dark chocolate-covered cherries, honey butter, and dark rye bread with warm butter.” The palate exhibits notes of “tangerine sherbet, coffee cake, graham cracker crust, almond butter, pistachios, and warm buttered blueberry muffin.” It concludes with a “full-bodied crisp finish, dark chocolate, black currants, and dried figs.”

The bottle’s fall inspired original artwork was created by Austin-local artist, Marc Burckhardt, and features a golden stallion in an autumn field.

Still Austin Bottled in Bond High Rye Bourbon is available now at Still Austin’s Tasting Room (Elmo Road, Austin, Texas) and will be available online and at select liquor stores beginning in October 2023 for a suggested retail price of $79.99.
