Found North Launches Batch 006 Second Summit and Batch 007
Found North has announced the launch of its latest Canadian whiskies, Batch 006 Second Summit and Batch 007.
Found North Batch 006 Second Summit was created by taking 500 liters of Found North Batch 006 and finishing it in a second fill PX (Pedro Ximénez) sherry butt for 8 months. Batch 006 Second Summit is bottled non chill-filtered, with no additives, and of natural color at a cask strength of 64.9% ABV (129.8 proof) and is limited to 642 bottles. Immediately, the nose hits with a barrage of apple butter, blackberry jam and childhood memories of Pepperidge Farm Chessmen cookies. The second pass reveals clementines and roses followed by fresh picked oregano and candied cashews atop a thick layer of toffee, maple syrup and fluffy pancakes. Underneath it all, there is a hint of burnt out campfire in the morning.
The landing is stunning and complex. The initial palate covers the full spectrum with sweet, citrus, savory and spicy notes all touching down harmoniously with one another. The viscous, tingling palate is perfectly integrated, presenting cedar wood, pine needles, demerara, tonka beans, black cherry and milk chocolate. The chocolate notes carry long into the nutty finish as a warming sweet, citrus and gently bitter blood orange note rises and falls, cresting as the whisky settles comfortably, never revealing its shocking 129.8 proof.
Found North Batch 007 is a blend of 24 year old corn whisky aged in ex-bourbon barrels, 22 year old corn whisky aged in an ex-bourbon barrel, 22 year old corn whisky aged in a new American oak barrel, and 18 year old rye whisky aged in Hungarian oak. Batch 007 has a final grain composition of 83% Corn, 16% Rye, and 1% Malted Barley and is bottled non chill-filtered, with no additives, and of natural color at a cask strength of 65.9% ABV (131.8 proof) and is limited to 3,345 bottles. The nose flows from the glass, a torrent of brown sugar, taffy and burnt caramel, followed by rivulets of torched lemon peel, creme brûlée and dried pear. Beneath the strawberry puree notes, graham cracker, vanillins and maple lie in wait. Lastly the nose presents a lovely minerality, like fresh rain on granite or a limestone pulled from a fast-flowing stream.
The whisky lands in a creamy rush. The sweet cinnamon residue crystallizes on the mid-palate. The growing tannic friction between nutmeg and black pepper crackles into the side palate, before a steady warmth and the sweet aroma of an old leather armchair settle into the finish. The oily, buttery mouthfeel carries a dark chocolate note deep into the finish, where the softening oak tannins and treacle light the kindling in your chest.
