Buffalo Trace Distillery Releases Experimental Baijiu Style Spirit

Buffalo Trace Distillery Experimental Collection Baijiu Style Spirit

Buffalo Trace Distillery has announced their first Experimental Collection release of 2021 and their 24th Experimental Collection release to date, Spirit Distilled From Sorghum and Peas Aged in New American Oak Casks.

The Buffalo Trace Distillery Experimental Collection explores how different mash bills, types of wood, barrel toasts, and environmental influences play a role in the flavor profiles of whiskey. Baijiu, a clear Chinese spirit distilled from sorghum and other grains, is one of the best selling spirits in the world. This Experimental Collection release is distilled like a whiskey, but produced using traditional Baijiu ingredients of sorghum and peas. After aging for 11 years in three separate casks (uncharred, charred, and toasted white oak), the spirits were married and bottled at 90 proof.

The Baijiu style Experimental Collection release is described as “rich and savory” on the nose, with aromas of “chocolate, dark cherries and stone fruit”, followed by “confection sugar” on the palate and “a sweet toffee finish.”

Buffalo Trace Distillery Experimental Collection: Spirit Distilled From Sorghum and Peas Aged in New American Oak Casks will be available in late April/early May in limited quantities at a suggested retail price of $46.99 for a 375 mL bottle.
