Redbreast Dream Cask Double Cask Edition

Irish Distillers has announced the release of Redbreast Dream Cask Double Cask Edition, the fifth release in the limited edition Dream Cask series.

Redbreast Dream Cask Double Cask Edition is a 30 year old single pot still Irish whiskey that was created through the marriage of two single casks, one selected by Master Blender Billy Leighton and the other by Blender Dave McCabe. The first cask, chosen by Billy Leighton, was a first fill oloroso sherry butt laid down in May 1990. The second, chosen by Dave McCabe, was a first fill bourbon barrel laid down in November 1991.

Bottled at 56.9% ABV, Redbreast Dream Cask Double Cask Edition is described as having “a rich and complex balance of aromas,” with “dried herbs and earthy tones combined with hints of antique furniture, anise, hazelnut, and tobacco,” followed by “autumnal fruits, black cherry, cassis, oak, and sherry wine influences.” The palate is “lucious and full with warming spices and soft tannins,” exhibiting notes of “dark roasted coffee, honey-menthol, sweet liquorice, pot still spices, orange peel, and smoked almonds.” It concludes with a “long and satisfyingly rich” finish with “fruits, spices and oak lingering until the very end.”

Redbreast Dream Cask Double Cask Edition is limited to 714 bottles and is presented in 500 mL format in a keepsake book made from recyclable cardboard that details the latest installment in the Dream Cask series.

Due to the highly limited nature of the Dream Cask series, interested individuals must enter a ballot on The Redbreast Birdhouse website for the chance to purchase a bottle. The ballot will be open for entries from Australia, China, Japan, New Zealand, Republic of Ireland, Singapore, South Africa, Switzerland, England, Scotland and Wales beginning May 23rd. The Dream Cask ballot will close on May 30th, at which point winners will be notified and given an opportunity to purchase a bottle of Redbreast Dream Cask Double Cask Edition for €550.
